Deliciously, Fresh Chicken Piccata


So, it looks like I either love to cook OR I love to eat because these blogs are all about the deliciousness that happens in my house each week. This week my husband and I filled each other's love cups by cooking this amazing Chicken Piccata with Lemon Sauce for dinner and it was so good for our souls and our bellies. I was not expecting as much flavor because, honestly the recipe only called for salt, Parmigiano, and hot sauce for flavor added in during the batter stage and THAT WAS IT. However, when we took the first bite we were in love with this chicken perfect for any summer night. 

RECIPE:

8 boneless skinless chicken breasts (pound down to 1/4")

3 teaspoons of olive(we used vegetable oil), divided

2 tablespoons of butter (WHOOPS, we used an entire stick y'all!)

1 cup of all-purpose flour

1 cup of Parmesan Cheese

4 eggs

1/2 teaspoon of salt

1/4 cup of white wine( or chicken broth, we used chicken broth. Make it work with what you have in your pantry)

1/4 cup of Parsley 

1/8 teaspoon of hot pepper sauce (come on now, shake it until the ancestors say stop)

3-4 fresh lemons for the juice and one for decoration(but really that fresh bite of lemon mixed with the chicken, sauce and capers errrmagaahhhh)

3 garlic cloves minced (because garlic goes in everything and don't you forget it!)

1. Flatten the chicken to 1/4" thick. Mix the eggs, whole squeezed lemon, and hot pepper sauce in one mixing bowl (the wet mix) and the flour, parmesan cheese, salt, and parsley in another mixing bowl (dry mix). This is a double dip process that makes a delicious crust. First dip the chicken in the egg mixture, then the cheese, back to the egg mixture and a final coat of cheese mixture. MAKE SURE THE CHICKEN IS COMPLETELY COVERED in the final dip. Don't forget to preheat your oil to medium high heat so it will not burn any of that chicken in a clean, nonstick skillet while you batter the chicken.

2. Fry your chicken for 3 to 5 minutes on each side until the juices run clear or you see that beautiful golden crust and set the chicken aside under foil to keep it warm.

3. In the same pan take your butter, go ahead and use the whole stick its so YUMMY. Add in the garlic, the juice of a whole lemon, and chicken broth until it reduces down. At the last minute add some capers. They are good!!!!

4. Plate this divine masterpiece. I made some cilantro lime rice because why not? Plate the rice, crispy chicken on top and pour that sauce baby. Add a few lemons to your plate and enjoy the literal taste of summer.
